PRALIN ICE CREAM

Lately I'm in an ice-cream mood, then here is another recipe, with one of my favorite flavor : the pralin !!!

We need :
- 4 egg yolks
- 200 gr of pralin (see the recipe here, or you can simply buy it if you prefer)
- 25 cl of milk
- 20 cl of evaporated milk
- 20 cl cream (30% fat minimum)
- no need of ice cream maker !

Prepare 200 gr of pralin made of hazelnuts and almonds (50 gr of hazelnuts, 50 gr of almonds and 100 gr of sugar). When completely cold, mince it very finely (with a blender/chopper).
Now, we have to prepare the custard. Beat the egg yolks with half of the pralin until the mixture get a light color. Then, boil the milk, the evaporated milk and other half of pralin. Out of the heat pour half of it over the egg yolks and stir very well, then pour the remaining milk and then put over a gentle heat in order to get the texture of a custard (a wee bit thick). This step would take 10-15 min and the mixture must never boil. Reserve in the fridge until cold.
Now, whip the cream until stiff and blend it to the pralin custard. If you have an ice cream maker, use it now, otherwise pour in a mold and put in the freezer and whip the mixture every 30 min in order to prevent the formation of the unpleasant ice crystals. Do this step 3 or 4 times.
