MELON ICE CREAM

No need ice-cream maker.

We need :
- 500 gr of melon
- 20 cl of evaporated milk
- 50 gr sugar (the amount of sugar depends on how the melon is sweet or not)
- 4 egg yolks
- 20 cl of cream

Mix the melon in a blender and then cook it gently, must reduce by half. Blend very well the sugar and the egg yolks until the mixture become quite white. Then blend the evaporated milk with the melon pulp, boil the mixture and, out of the heat, pour half of it over the sugar/yolks, stir well and quickly. Pour the other half and put over a gentle heat to turn the mixture a bit thick (like a custard), it must take about 10-15 min (do not boil it!!!). Let cool down.
When the melon custard is cold, whip the cream and blend it with the custard. Pour in a mold and put in the freezer. Now, try to whip the ice-cream every 30 min in order to prevent the formation of ice crystals. Make it 3 or 4 times... These steps are very important since we don't have any ice-cream maker.

Pour in a mold and put in the freezer... Whip every half hour, 3 or 4 times.


After one night in the freezer... it's weird the color has changed, but it's so nice !
