In the beginning, there was this, a sourdough starter. His name : Øyeblikk the First.
I gave him life in 4 or 5 days (notice that it's better than God huh! Hehe)

He was very active and strong, full of life.

He helped me to make beautiful breads. But they were definitely too acid.
Acidity helps to preserve the bread and gives a very special taste, but too much it’s not nice.

I didn't know what to do to make breads a little bit less acid, more balanced in taste.
Then I decided to make a break with Øyeblikk for a while and go back to a mere and soulless yeast.
But I didn't want to kill this sweet friend. Even so, I gave him life and I just cannot take it back from him.
So I put him to sleep without asking him. Yes, I vilely dehydrated him to create a backup for the future.
I hope I didn't kill him !

Since then, more than a year has passed.
I've just abandoned him in a small plastic bag lost among some kitchen stuff in the darkness of the bottom of a drawer.
But today I want to try to make bread with him again. I know he can make good bread !
I just hope it’s not too late.
So with the helps of the Gods and the magic of H2o I’m trying to resurrect Øyeblikk the First !
Today he’s making small bubbles. What should I understand about that ?
He’s alive, alive !!!!!

Melon Pan is a Japanese sweet bread. Here I flavored it with cardamom and chocolate chunks.

The Crust Dough:
- 100 gr flour
- 40 gr softened butter
- 30 gr brown sugar
- 30 gr egg
- 1/2 tsp baking powder

In a large bowl, cream the brown sugar with the butter. Then add the egg and beat until homogeneous.

Add the flour and the baking powder, mix to combine. Do no over mix.

Wrap this dough in plastic film and reserve in the fridge for at least 1 hour.

The Sweet Bread Dough :
- 150 gr flour
- 60 gr milk
- 30 gr egg
- 15 gr sugar
- 3 gr salt
- 6 gr fresh yeast
- 1/2 tsp powdered cardamom
- 30 gr chocolate chunks
- 40 gr softened butter

In a large bowl, gather the flour, sugar, salt, yeast and cardamom. Add the milk and egg, then knead for 5 minutes...

Add the softened butter and knead again for about 10 minutes. Then combine the chocolate chunks. Allow to rise at room temperature for 1 hour. After that, punch the dough and place in the fridge for at least 1 hour.

Assembly & Baking :

Remove the sweet bread dough and the crust dough from the fridge. Cut each one in 6 equal pieces. Form balls.

Between 2 plastic film sheets, roll out the crust dough 2 mm thick...

...then wrap the sweet bread dough with it.

Apply a thin layer of sugar on the surface.

And make some scores with a knife or a pastry scraper. Allow to rise again at room temperature for 1 hour or more (according the temperature).

After 1 hour...

Put in preheated oven (medim heat) for about 15 minutes.

Crunchy outside and soft inside, awesome !
