Another muffins recipe, cocoa and roasted hazelnuts. :)
For 6 regular muffins :
- 110 gr all purpose flour
- 90 ml buttermilk (or curdled milk : add 1 tsp white vinegar and let rest 5~10 min)
- 55 gr sugar
- 60 gr melted butter
- 2 handfuls roasted hazelnuts (10~15 min in the oven) and roughly chopped.
- 1 egg yolk
- 2 tbsp cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
Blend together the flour, sugar, cocoa, baking powder and soda, salt and the hazelnuts. In another bowl, mix the yolk, the buttermilk and the melted butter.
Then add the wet mixture into the dry ingredients and stir but don't over mix.
Fill the muffins molds with the batter and put in the preheated oven (medium heat) for 15~18 min. Let cool down and remove from the molds. Enjoy.
