BOLAS DE BERLIM (BERLIN DOUGHNUTS)

 Ich bin ein berliner...

For about 9 doughnuts,

The Dough :
- 250 gr flour
- 60 gr water
- 50 gr milk
- 50 gr butter
- 25 gr sugar
- 1 whole egg + 1 yolk
- 1,5 tsp dry yeast
- 1 tsp salt

Melt the butter in warm milk, rehydrate the yeast in the water for 5 minutes...

Gather all the ingredients in a large bowl, then knead...

10 minutes by hand at least, or use a food processor...  Let it rise for 45 minutes covered with a cloth, then punch it, cover it with plastic film and put in the fridge for the night... (If you don't want to wait this time you can skip the fridge step and just let it rise until it doubles its size, about 1 hour or 2 instead of the initial 45 minutes)...

The day after, take the dough out from the fridge, let it rest 15 minutes at room temperature, then roll it out 1,5 cm thick...

Then cut discs out of it, here 7 cm diameter, and place them on a surface floured. Cover them with a floured and clean cloth and leave to rise 1 hour...

The Pastry Cream (richer) :
- 25 cl whole milk
- 45 gr sugar
- 1 vanilla sugar packet
- 35 gr flour or starch
- 1 whole egg + 2 yolks
- 25 gr butter

While the discs of dough are rising, prepare the pastry cream,

Beat the sugar with the eggs, then add the flour...

Bring to boil the milk, then pour half of it over the eggs mixture, mix well, then pour it in the other half of milk, cook until it thickens mixing constantly, about 1 or 2 minutes (medium heat)...

When done, add the butter, mix until completely melted and absorbed...

Place the cream in a bowl and cover it with a plastic film, leave to cool down in the fridge...

The Frying :
- 1 liter neutral oil
- Sugar to sprinkle the Berlin doughnuts

Heat up the oil, about 160°C (the oil can not be too much hot)

Plunge maximum 2 or 3 pieces of dough in the oil, turn them frequently. They are cooked after about 5 minutes.

They blow up immediately in the oil...


When done, place them on paper towel, then sprinkle them with sugar (or a mixture of sugar and cinnamon)...

Leave to cool down...

When at room temperature, open them with a knife or scissors. Put the cream in a pastry bag and fill the Berlin doughnuts with it.
