POPPY SEEDS BREAD

I'm trying to master the art of baking bread then today I made a loaf with poppy seeds and a bit of wholemeal flour. I used a poolish (102 gr water + 102 gr flour and a pinch of yeast).

Total ingredients :
- 75 gr wholemeal flour
- 225 gr all purpose flour
- Dough hydration : 68% - 204 gr water
- 1 level tsp of dry yeast
- 1 level tsp of salt
- 1 tbsp poppy seeds

Kneading : by hand for about 15 minutes
Room temperature : 24-25°c
1° rise : 1h30
2° rise (proofing) : 1h
baking time : 22 min at 210°c
steam : yes
