In french Pain de mie is a sandwich bread.

400 gr pastry flour (type 45)
240 gr Milk (60%)
40 gr melted butter (10%)
12 gr sugar (3%)
1,5 tsp salt
1,5 tsp dry yeast (or 8 gr fresh yeast)

Rehydrate the yeast in the warm milk (5 min)
Combine the flour with the sugar and salt.
Pour the mixture milk/yeast and the melted butter into the flour and knead for about 10~15 min.
Let rise for 1H30 (covered).
Then, delicately, punch the dough, give it fold, shape it like a torpedo and put in a mold.
Let rise again 45 min (covered)
Put in a steamed and preheated oven (high heat) for 20 min to 30 min according your oven.
Let cool down at least 1 hour. 

Voilà, ready to make sandwiches or toasts for the breakfast.
