FISH FILLETS IN SCALE OF CHORIZO & ALMOND

Very easy and really tasty :
Season the fillets with salt and ground pepper.
Cut thin slices of Spanish or Portuguese chorizo and place them over the fillets, do the same with the flaked almonds previously lightly roasted (the almonds are optional, you can just use the chorizo, it's divine.)
Wrap the fillets in greaseproof paper and reserve the fish in the fridge for about 30 min or more.
Put a bit of oil in a frying pan and cook the fish directly with the paper. Cook the side with the chorizo first, 2~3 minutes, and the other side 1~2 min.
It's possible to cook them in the oven, then put the fish without greaseproof paper on an oven tray, chorizo side on top, and cook for 6~7 minutes (preheated, medium heat).
Enjoy without any delay.
