MUFFINS TASTE OF PORTUGAL

Anise, cinnamon, pumpkin, raisins, walnuts, those are the flavors we can find in this recipe. Flavors we usually use to bake pumpkin merendeiras. Smells Portugal ! :)

For 6 regular muffins,

- 110 gr all purpose flour
- 70 gr sugar
- 30 gr melted butter
- 20 ml oil
- 120 ml pumpkin (cooked and mixed in the blender)
- 50 ml milk
- 30 gr walnuts
- 30 gr raisins (previously soaked in warm water)
- 1 egg
- 1 tsp anise powder
- 1 tsp cinnamon powder
- 1,5 tsp baking powder
- 1 tsp baking soda
- pinch of salt.

Cook the pumpkin in hot water for 15 min, then mix it in the blender with the milk. Add the oil, melted butter and egg, stir well and reserve.
In another bowl, combine together the flour, sugar, all the other powders and the fruits (walnuts and raisins).
Join the liquid mixture in the dry mixture and mix quite quickly, do not overmix.
Pour the batter in the muffins molds and put in a preheated oven for 20 min (medium heat).
