BOLO REI (THE PORTUGUESE TWELFTH NIGHT CAKE)

My first Bolo Rei :)

Ingredients :
- 400 gr flour
- 100 gr butter
- 100 gr sugar
- 80 gr milk (80 ml)
- 3 whole eggs
- 150 gr crystallized fruit (100 gr for decorating the top)
- 70 gr raisins
- 75 gr nuts (walnuts, almonds, pine kernel)
- 5 cl Port wine (to soaked the raisins in it)
- zest of lemon and orange
- powdered sugar (for decorating)
- 1,5 tsp dry yeast
- 1 tsp salt

Hydrate the yeast in a bit of the milk (lukewarm) for 5 minutes.
Soak the raisins in the Port wine.
Heat up the remaining milk with the butter, let it melt and reserve until lukewarm.
In a bowl, mix the flour, the sugar, salt, zest. Add the mixture milk/melted butter, the yeast, stir, and add the eggs. Knead for 10 minutes. Cut 50 gr of the crystallized fruit into little cubes (reserve some for decorate the top of the cake), cut roughly the nuts, strain the raisins and combine all those fruits into the dough, knead for 1 or 2 more minutes. Let rise for 2 hours (covered in a warm place).
Then, punch the dough, shape it into a crown and decorate with the remaining crystallized fruit and some nuts. Let it rise one more hour.
Then, put in a preheated oven (medium heat) and steamed, for 25 minutes.
Brush it before with a mixture of egg yolk and a bit of water. I didn't do it, because my oven always burns it, so I prefer brush the cake after baked with a syrup (water + sugar).
