CHESTNUT JAM

A base for several desserts, or just to spread on a slice of bread for breakfast...

Ingredients :
- Chestnuts
- Sugar
- Vanilla flavor (or rum)

Clean and make an incision with a knife in each chestnut. Blanch them in water for 10 minutes, then peel them (the first thick peel).

Put them back in water and cook them for 30 to 40 minutes. Strain, remove the second peel (the thinner one) and mash them up. Weigh this puree...

Put sugar in a sauce pan (about 80% of the puree weight), barely cover with water, cook the sugar until it reaches 125°C / 257°F...

Then add the chestnut puree into the sauce pan, add the vanilla flavor or the rum and cook over gentle heat (it might take a while)...

The jam is done when the it darkens and you can make a "road" with the spatula or the wooden spoon... Put right away in jars when still hot.
