Norwegian St.Lucia Buns (December 13th)

Makes 6 lussekatter,


Ingredients :
- 200 gr flour
- 120 ml milk
- 40 gr sugar
- 40 gr butter
- 1/2 tsp turmeric (or better, a light pinch of saffron)
- 1/2 tsp cardamom
- 1 tsp salt
- 10 gr fresh yeast
- 12 raisins

In a large bowl, gather the flour, sugar, turmeric; cardamom, salt and the fresh yeast (crumbled). Melt the butter and mix it into the milk (previously lightly heated), pour this mixture over the dry ingredients...


...knead until homogeneous and smooth (for about 5 to 10 minutes). Let rest for 1h30 covered with a piece of cloth.

Then divide the dough in 6 pieces, form a string then shape as a "S".

Put them over an oven tray covered with baking paper. Place a raisin in the center of each swirls. Let them rise for 1 hour (still covered with a cloth).

 Then brush them with egg yolk...

 ...and bake in a preheated oven for about 10 minutes (according to your oven).
