CHOUQUETTES

Ingredients :
- 125 gr water
- 125 gr milk
- 100 gr butter
- 150 flour
- 250 gr whole eggs (about 4 or 5 according the size)
- 1/2 tsp salt
- 1 tbsp sugar
- pearl sugar

In a pan, heat the milk, water, butter, salt and sugar until the butter is melted and when it starts to boil, then out of the heat add the flour, at once. Mix until homogeneous. 

Put back the pan over gentle heat and dry the dough stirring all the time (1 or 2 minutes). The dough must pull away from the pan sides.

Allow the dough to cool down for 5 minutes, then add the eggs one at a time mixing with a wooden spoon or a food processor with dough hooks until completely combined.

Notice the final texture...

Use a pastry bag  or spoons to form heaps more or less 2,5 cm diameter over an oven tray covered with baking paper or over a silicon baking mat. Flatten the top with a fork, then brush them with a mixture of egg and a bit of water, then sprinkle them with pearl sugar. Press lightly the sugar with the fork to stick it to the dough.

Place in a preheated oven (medium to high heat 180°C) for 25 to 35 minutes (according the size of them). You can finish with the door ajar the last 5 minutes (to let the steam get out of the oven and help the dry the chouquettes). Try to not open the oven door the first 15 minutes.

It makes more or less 80 chouquettes (according the size you choose)
