LEMON ICE CREAM

Lemon ice cream (no need ice cream maker). Contains arrow root.

Makes about 400 ml ice cream (I made this small amount because I want to serve only 1 or 2 tablespoons with another dessert)

Ingredients :
- 150 gr + 50 gr cream
- 2 whole eggs
- 100 gr lemon juice
- 65 gr sugar
- 1 tbsp arrow root (I didn't weigh, maybe about 10 to 15 gr)

I'm lucky I got some lemons from Portugal, even more than organic, from my parents' garden hehe! It's an interesting lemon tree variety because it gives lemons all year.
So, press some lemons to get 100 gr juice...

Mix the arrow root with a bit of cream (taken from the 150 gr)... Here the arrow root will help to avoid the appearance of ice crystals in the ice cream and it will also slow down the melting. 

In a small pan, mix the eggs and the sugar. Then add the lemon juice and the cream (150 gr), mix until homogeneous...

Then add the arrow root mixture, mix again and cook over a gentle heat until it thickens (same texture more or less of a custard)...

Out of the heat add the rest of cream (50 gr) and whip until well combined. Leave to cool down for about 30 minutes...

Pour in a container and place in the freezer. Mix with a spiral hook hand mixer every 30 minutes for 3 or 4 times (yes it's quite boring but when we don't have any ice-cream maker it's the only way to avoid the ice crystals in the ice cream). 
Take the ice cream out of the freezer some time before the service, the temperature of the ice cream has to raise a bit (from -20°c to -5°c approximately) in order to be smoother.
