Fiadone is a cake from the French island Corsica. This dessert is made of a fresh sheep cheese produced exclusively in this island, the brocciu. Here served with lemon ice cream, a stick of caramelized puff pastry, and a slice of preserved lemon.

Ingredients :
- 500 gr brocciu (previously drained)
- 4 whole eggs
- 150 gr sugar
- zest of 1 lemon
- 2 tbsp brandy (opcional)

Gather in a large bowl, sugar, lemon zest and the brocciu...

Mash the cheese with a fork or a whisk, then add the eggs one by one...

Do not over mix, the texture should remain lumpy. Pour in a pan lined with baking paper previously greased with butter(next time I'll use a smaller pan like 21 cm diameter, here it was a 26 cm one) and place in a preheated oven (medium heat) for 30 to 40 minutes.

When done, remove from the oven and leave to cool down then place in the fridge until the service (take it out 30 minutes before though). You can enjoy simply like that, or with a lemon ice cream (check the recipe here : click!)...
