LIME MARSHMALLOW

Ingredients :
- 35 gr egg-white (about 1 egg-white)
- 125 gr sugar
- 20 gr neutral honey (here : acacia)
- 20 gr glucose syrup
- 65 gr water
- 12 gr gelatin (6 sheets)
- 15 gr lime juice
- 1/2 lime zest
- icing sugar and corn starch (50-50)

Hydrate the gelatin in cold water for 10 minutes. In a small sauce pan, heat up the lime juice, then out of the heat add the gelatin (drained), stir until well dissolved. Reserve.

In a large bowl, beat the egg-white until it is smooth...

Meanwhile, in a small sauce pan gather the water, sugar, honey, glucose syrup, lime zest and cook until it reaches 130°C / 266°F then immediately pour this mixture over the smooth egg-white while always beating, then add the gelatin mixture...

Keep beating until the mixture cool down...

Then spread (more or less thick according the future use) over a baking paper lightly oiled and sprinkled with a mixture of icing sugar and corn starch. Sprinkle again the top of the marshmallow and allow to dry for at least one hour at room temperature.

Then cut as you want, follow your imagination.

I wanted them white, but obviously you can use a small amount of green food coloring to get them green (as the lime)
