MELON SORBET

A melon sorbet (with ice cream maker)

Ingredients :
- 600 gr melon pulp
- 150 gr water
- 100 to 150 gr sugar (according how sweet is the fruit)
- 50 gr glucose
- 1 tsp locust bean gum E410 (optional)

Clean and peel the melon...

Cut in small pieces, mix in a blender.

In a sauce pan, gather the water, the sugar and the glucose. Bring to boil and out of the heat add the locust bean gum, whip well. Allow to cool down.

Then pour it into the melon pulp, mix. Place 2 hours in the fridge and then pour the mixture in your ice cream maker. When done place 1 or 2 hours in the freezer then use it.
