Hello dear all ! Today I want to present you a recipe of a tart from Alsace (France). I never tried a cheese cake but I guess it's basically the same thing !

Then, we need to make a tart base with :
- 200 gr all purpose flour
- 100 gr butter
- 100 gr sugar
- 1 whole egg
- pinch of salt

For the rest of the recipe we need :
- 500 gr fromage frais (it's a cheese a bit like heavy cream)
- 20 cl heavy cream
- 3 or 4 eggs depending of size
- 100 gr sugar
- 50 gr all purpose flour
- 40 gr starch (maïzena)

Follow the recipe step by step with the pictures below :

Blend the flour with sugar, butter, salt and then blend...


Now, add the whole egg...


blend until homogeneous and reserve for about 2 hours in the fridge...


roll out the pastry...


try to make a circle... hum it's not so easy lol

and put it in a greased pan... (a cake pan and not a tart pan)

now, in a bowl mix the 3 or 4 yolks with the sugar...


and try to get the most white mixture as possible


add the fromage frais (cheese) mix, add the flours and mix again...


beat the heavy cream to get a sort of chantilly (no sugar!)


beat the eggwhites until stiff as well...


add the cream in the previous mixture


and finally, blend the eggwhites into the mixture very carefully to get it frothy


put in the pan and in a preheated oven for about 40 minutes


after baking, it looks like a soufflé, yummy


After cooling down it falls a bit, it's normal

For this first try I'm very happy ! The texture is light and smooth, very good !
