THE TARTIFLETTE

When it's cold outside and when the light is lacking during the long winter nights, that's nothing better than eating this french dish : the tartiflette !
For this recipe we need necessarily a french cheese named reblochon (this one gives a special taste to this dish). And we need also :
- onions
- garlic
- streaky bacon (smoked or not)
- oil
- heavy cream
- ground pepper and salt
- potatoes
- and then a reblochon (or half one depending the number of persons)
- white wine (optional)

See below the recipe step by step :

Slice onions. I used a white onion and a red one because it has a special flavour I like.

Chop garlic and reserve.

I chose smoked streaky bacon. (unsmoked works as well).


Remove rind and gristle and then cut it in cubes.


Heat up oil in a pan and cook the onions, the bacon and garlic.
When the mixture is dry, add some tears of white wine. Cook until dry and reserve.

Scrape off sligtly the cheese rind.

And slice it !
Peel the potatoes and cook them whole in water (add some salt but not much because the cheese and the bacon are already salted) When the potatoes are cooked, slice them.

and mix them with the mixture bacon/onion. Cook over a gentle heat for 2~3 minutes.
Remove from the heat and add the heavy cream. Stir until the cream is completely melted.
Then, put the mixture in a ovenproof dish
Put the sliced reblochon over the mixture.
Bake it for about 20 minutes in the oven.


It's a nourishing dish that allows us to face the harsh winter.
