Oh god how I worship this Thai soup (very good memories of when I worked in Paris...) Then, I wanted to give it a try at home !

Then we need :

Some slices of ginger...

Some slices of galanga...

Some sections of citronella...

The juice of lime (or lemon)...


Coconut milk...

Mushrooms...

Some slices of chicken breast...

Bergamot leaves (or lemon or even orange tree leaves)...

water and a chicken stock cube...

Hot pepper...

Coriander leaves...
- Boil some water with the chicken stock cube, the coconut milk, the galanga, the ginger and the citronella.
- Add the chicken in thin slices, the bergamot leaves, the mushrooms and the hot pepper.
- cook over a gentle heat until the chicken is done.
- In the final add the coriander.

A very sweet and hot thai soup...


PS : the citronella doesn't have to be eaten. The two rhizomes can be eaten only if they are tender. Otherwise these ingredients are mainly used to give the broath their flavour.
