APPLE MILLEFEUILLE

This week I've been trying several recipes based on homemade brick pastry sheets.
Today I finish my try-outs with an improvised millefeuille of caramelized apple.

We need some sheets of brick pastry (homemade or not), apples, sugar, icing sugar, butter and some spices like cinnamon, anise, vanilla etc...
Shape the sheets of brick pastry as you want, here oblong shaped, grease each one with melted butter, sprinkle with icing sugar and then stack them (3 or 4 layers). Put in a preheated oven for about 10 min (keep an eye on them). Let cool down and reserve.
Cut the apples in small cubes (pour some lemon juice to prevent the oxidation).
Prepare the spices syrup : blend 15 cl water with 2 tbsp sugar and the spices you like, here cinnamon and anise. Boil it. Here you can use the flavor you want, even tea or verbena or whatever you like, thyme, rose, orange tree leaves etc... the idea is to flavor the caramel.
Now, the caramel : melt some sugar (2 or 3 tbsp) in a saucepan and let it brown but not much, then add the butter (maybe about 2 tbsp) and the syrup and then the apples. Cook for about 5 minutes. The apples must be soft or still a bit thick inside, as you like.

Now, you just have to put down some apples on a brick pastry baked and make a second level and finish by sprinkling some icing sugar on the last layer of brick pastry.

Of course you can eat that but promise yourself to go out running or do any sports the day after ;)
