For 4 portions :
Cooked apples :
- 4 apples
- 2 tbsp butter
- 4 tbsp sugar
Almond shortbread :
- 60 gr flour
- 60 gr ground almond
- 40 gr butter
- 20 gr sugar
Salted butter caramel :
- 60 gr sugar
- 25 gr salted butter
- 120 gr cream
Prepare the almond shortbread : beat the butter with the sugar until fluffy, then add the flour and ground almond, combine. Refrigerate 30 min. Then, shape 4 circles with a pastry cutter and put in the oven for about 10 minutes. Reserve.
Peel the apples, remove the cores and cut them into cubes. Then, cook them in a frying pan with the butter and sugar (gentle heat). They have to be soft but stiff though.
Put the apples on the shortbread and refrigerate.
The salted butter caramel : heat up the sugar until golden brown, then add the butter (mind the spatters!) and finally add the cream, cook for 1 minute.
Pour this caramel on the apples and serve.
