NOUGATINE

Nougatine is thin layers of caramelized almonds (or hazelnuts, pistachio whatever you want)

100 gr sugar
50 gr chopped or flaked and roasted almonds

Melt the sugar with a bit of water, then add the almonds. Pour on a oven tray covered with greaseproof paper. Put another layer of greaseproof paper on the nougatine and roll out with a rolling pin to get a thin layer.
Put in a preheated oven until golden brown, then let cool down for a while and cut the forms you want. Don't let cool down too much otherwise you won't be able to cut it finely.

Enjoy with coffee or tea or use them to decorate cakes or dessert.
