CHOCOLATE COATED ALMONDS

Today, a recipe of chocolate coated almonds from the beautiful book of Christophe Felder, "Pâtisserie ! : L'ultime référence".

Ingredients : 
- 100 gr almonds (without peel)
- 100 gr dark chocolate (with milk chocolate in the original recipe)
- Sugar syrup (30 gr sugar, 25 ml water)
- pinch of salt
- 30 gr powdered sugar
- 10 gr unsweetened cocoa powder

Prepare the sugar syrup : boil the water with the sugar until completely melted. Leave to cool for 10 minutes. Place the almonds in a bowl and pour the syrup over them. Stir with a spatula, the almonds have to be completely coated.  


Then spread the almonds on an oven tray covered with greaseproof paper. Put in the oven until roasted, it takes like 10 minutes (medium heat). Leave to cold.


Meanwhile, melt the chocolate over a hot water bath (or in the microwave). No need to temper it, even if, I confess, I did it, I like to train tempering chocolate... ;)


Place the bowl that contains the coated almonds in a larger bowl with cold water and ice cubes (so the chocolate will crystallize easier and faster).


Then, pour 1/3  of the melted chocolate over the almonds and stir until the chocolate sets and the almonds separate of each other, then pour another 1/3 of chocolate and so on until the almonds are completely coated with the chocolate that left. 
Remove the smaller bowl from the water from time to time while you're stirring in order to control the crystallization of the chocolate.


In another container, mix the powdered sugar with the cocoa powder (sifted). And put the almonds in it, stir until the almonds are completely coated with this powder. 


Voilà, ready to be enjoyed with the coffee !
