PASTEIS DE TENTUGAL

Today I want to give you the recipe of a portuguese pastry : Pasteis de Tentúgal ! Tentúgal is a little city next to Coímbra in the middle of Portugal, so this pastry comes from there.

To do this simple recipe, we need yolks... (1 yolk allows to do one pastel de Tentúgal) By the way, the word yolk is my favourite english word ! :D and I don't know why !


We need also sugar, one tablespoon for each yolk and one more for the pan... In a pan, cover the sugar with water and make a sirup... Then remove from the fire. Add the yolks, and then cook over a gentle heat and mix until this preparation becomes just a bit thick. Leave cool down... The name of this preparation is "ovos moles" (soft eggs)


We need Filo sheets as well. Filo is a very thin dough. Butter one sheet with a brush and stack a second filo sheet, butter this one too. Cut these two sheets in 4 (verticaly and horizontaly). So we can do 4 pasteis. Put down 2 tablespoons of ovos moles in each filo squares and fold them as in the pic.


Put them in a medium oven for about 10 minutes...


Sprinkle icing sugar over them and that's it !


It's a very simple recipe, the result is crispy and very sweet !
It's one of my favourites portuguese pastry, hope you'll like them...
